Lemon, thyme Chicken skewers
Ingredients
4 large pieces of chicken thighs
2 zucchini
1 capsicum
3 shallots
1 lemon
1 tbsp garlic cloves, chopped
2 tbsp fresh pick thyme leaves
1 tsp Sea Salt
3 tbsp virgin olive oil
Method
Firstly take 6-8 bamboo skewers and soak in water.
Clean and cut up the chicken thighs into 3 cm cube and into a prep bowl. Marinate the chicken with garlic, thyme, 1 tbsp virgin olive oil, sea salt and 1 tsp of lemon zest. Cover with cling wrap and into the fridge for 1-2 hours. In a small mixing bowl, add the remaining virgin olive oil, 1 tbsp of picked fresh thyme leaves, pinch of sea salt and 1 tbsp lemon juice to brush on the skewers when barbecuing.
Cut capsicum, zucchini into 3 cm squares and 3 cm for the shallots. Prepare the skewers by skewering capsicum, chicken, zucchini, shallot and repeat to all skewers.
To cook, heat up your Everdure BBQ grill on medium. Place skewers on the bbq, turning and brushing with your lemon & thyme oil mix. Make sure all sides are cooked.
Chorizo & capsicum skewers
Ingredients
2 chorizo sausages
2 capsicum
1 tsp smoky paprika
1 tsp Sea Salt
2 tbsp virgin olive oil
Method
Firstly take 6 bamboo skewers and soak in water.
Clean and cut up the chorizo into desired size. Cut capsicum into 3 cm squares and prepare the marinade by adding the virgin olive oil, smoky paprika and sea salt in a small bowl to brush onto the skewers. Prepare the skewers by skewering capsicum and cut chorizo, repeat to all skewers.
To cook, heat up your Everdure BBQ grill on medium. Place skewers on the bbq, turning and brushing with your smoky paprika oil mix. Make sure all sides are cooked.
Honey garlic soy beef fillet
Ingredients
1 kg whole fillet beef
1 tbsp garlic cloves, chopped
2 tbsp soya sauce
2 tbsp honey
½ tsp sea salt
Pinch of black pepper
2 tbsp virgin olive oil
Method
Prepare and clean your fillet beef, leaving whole and into a large dish to marinate.
In a small bowl prepare your marinade by combining virgin olive oil, garlic, honey, soya sauce, salt and pepper. Coat beef with the marinade and cover with cling wrap and into the fridge for 2 hours.
To cook, heat up your Everdure BBQ grill on medium. Place the fillet steak on the bbq and cook with the lid down for 8 minutes on each side. Turn beef only once if possible. Use remaining marinade to baste to stop from going dry. Once cooked, rest the beef for 15 minutes before cutting and serving.
