Do you ever have lots of rice leftover from a previous meal? Well if you do, this is a fantastic recipe rehashing a delicious bowl of something something from the leftover rice. I've pimped it up a little, using some rather unusual ingredients. Enjoy it!
Serves 2
Ingredients
2 cups of leftover rice (make sure the rice is dried out, not too mushy)
2 rasher of smokey bacon
80g minced pork
1 clove garlic, finely chopped
1/2 tsp fennel seeds
2 eggs
1 shallot onion, finely chopped
2 stalk of green onion shallots, finely chopped
1 tbsp soya sauce
1 tsp chinese rice wine
1tbsp canola oil
Method
Heat up a large deep pan or wok, heat up the fennel seeds. Now heat the canola oil and place the bacon, pork, garlic and shallots and saute until just cooked. Break in both eggs and stir gently. Place the rice in with the mix and using the back of an egg flip gently break down the rice. Add soya sauce, chinese wine, green onion shallots and toss. Cook for another minute and serve immediately, topping with some finely chopped green shallot onions.
