This is a great recipe to have on hand for a special choc chip cookie like mum use to make. I love this very easy recipe, it will become your family favourite
Makes 12 cookies
Ingredients
170g butter, softened
150g sugar
160g brown sugar
2 eggs
1/2 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1 tsp vanilla essence
270g flour
1 cup chocolate chips (70% dark chocolate chips is preferred)
1/3 cup rough chopped walnuts
Method
Cream sugar, butter, eggs and vanilla essence in a large stand mixer or large bowl until well incorporated. Add sifted flour, salt, baking powder, baking soda and mix for 2 minutes until cookie dough is formed. Fold in the chocolate chips and walnuts. Place cookie dough in a length of baking paper and roll into a 6cm log. Cool in the fridge for an hour before cutting up and baking.
To bake cookies, heat the oven on fan forced to 190ºc , cut cookie dough at 1-1.5cm to create a disk of dough. Place disks (well spaced) on a large baking tray lined with baking paper and into the oven for 8 minutes, cool cookies before eating.
