I get cravings for chinese BBQ all the time. There are so much about crispy pork belly, duck, soya chicken and char siew that screams comfort to me. This recipe is for my version of Char siew on rice with a sweet soy and ginger shallots smothered all over.
Serves 2
Ingredients
Char Siew BBQ Pork (see recipe below)
1 cup medium grain rice
1 1/2 cup water
Sweet soy
2 tbsp light soy sauce
1 tbsp BBQ pork juice drippings (if available)
1 tbsp water
1 tbsp maltose syrup
Ginger & shallots
3 tbsp canola oil
1 tbsp ginger, grated
2 tbsp shallots/ green onion, thinly sliced
1/2 tsp sea salt
Method
To cook the rice, place rice in a small pot with lid. Wash rice under cold water and drain. Wash until the water runs clear. Cook rice on low flame with lid on until the water is evaporated (about 10 minutes) and the rice is cooked and fluffy. Next cut the BBQ Pork Char Siew, head to my recipe to make BBQ pork. Next, combine all the ingredients for the sweet soy ready to pour over the rice. To make the ginger and shallots, heat the oil in a small pot, turn off and place the ginger in then the sea salt. Lastly add the chopped shallots.
To plate up, place desired amount of rice in a bowl, dress with sweet soy. Place Char Siew over the rice and top with ginger & shallots. My kind of eating!
