I am forever the owner of bananas that go just that little bit ripe. Do not fear, I have this great banana bread recipe to the rescue! So simple and delicious. Pan toasted with a scoop of french vanilla ice cream on top, oh so delightful!
Makes 1 loaf
Ingredients
140g butter, softened, plus extra
for the tin
140g caster sugar
2 large eggs, beaten
140g self-raising flour
1 tsp baking powder
2 very ripe bananas, mashed
1⁄2 cup of walnuts
50g icing sugar
Method
To make the banana bread, start by heating oven to 180°C fan. Butter a 2lb
loaf tin and line the base and sides with baking parchment.
Cream the butter and sugar until light and fluffy, then slowly add the eggs
with a little flour. Fold in the remaining flour, baking powder and bananas.
Lastly adding the walnuts to the mix. Pour into the tin and bake for
about 30-40 mins until a skewer comes out clean. Cool in the tin for 10
mins, then remove to a wire rack to cool.
Slice and pan toast banana bread with a knob of butter, sprinkle with some icing sugar (optional) and finish with your favourite french vanilla ice cream!
